The Veggie Lab started as an archive of various vegetarian kitchen experiments that I’ve come up with. I wanted to start keeping track of what I was creating and possibly even get feedback on it. I also hope that it will help show people how easy it can be to put together simple meals from fresh ingredients. I know the “I just got home from work and I’m starving and I don’t want to make 4 people’s worth of food” world, I’ve been there.  So keep in mind that much of what you’ll find on this blog was made just for me and was done within 45 minutes of me getting home from work (many times at 7 or 8 at night).
